Ingredients
BASE:
1 cup Self-raising flour, sifted
½ cup caster sugar
1 tbs butter, softened
1 egg, lightly beaten
TOPPING:
1/3 cup Raspberry jam
2 eggs
½ cup caster sugar
½ tsp vanilla essence
1 cup desiccated coconut + 1 tablespoon
Method
- Preheat oven to 180°C. Grease and line slice pan with non-stick baking paper
- For the base, combine flour and sugar
- Rub in butter using finger tips until it resembles bread crumbs
- Mix in egg until combined
- Press base mixture into tin
- Top with jam
- For the topping, Beat eggs until thick and creamy
- Gradually add sugar until thick and glossy.
- Fold in 1 cup of coconut and vanilla
- Spread topping mixture over jam
- Sprinkle remaining coconut evenly over the top
- Bake for 30-35mins or until top is golden brown
- Allow to cool in the pan for 10mins before cutting into squares
