Raspberry Coconut Slice


Ingredients
BASE:
1 cup Self-raising flour, sifted
½ cup caster sugar
1 tbs butter, softened
1 egg, lightly beaten
TOPPING:
1/3 cup Raspberry jam
2 eggs
½ cup caster sugar
½ tsp vanilla essence
1 cup desiccated coconut + 1 tablespoon
 
Method
  1. Preheat oven to 180°C. Grease and line slice pan with non-stick baking paper
  2. For the base, combine flour and sugar
  3. Rub in butter using finger tips until it resembles bread crumbs
  4. Mix in egg until combined
  5. Press base mixture into tin
  6. Top with jam
  7. For the topping, Beat eggs until thick and creamy
  8. Gradually add sugar until thick and glossy.
  9. Fold in 1 cup of coconut and vanilla
  10. Spread topping mixture over jam
  11. Sprinkle remaining coconut evenly over the top
  12. Bake for 30-35mins or until top is golden brown
  13. Allow to cool in the pan for 10mins before cutting into squares
